Grape analysis


Analytic assessment begins in the vineyard, where tasting the grapes provides us with an initial assessment of the maturation level of the grapes. To determine the actual harvest date, we rely on chemical, physical and climatic analysis. In conjunction with the client's commercial objectives, this data further allows us to plan the vinification schedule and calculate the required nitrogen addition essential for fermentation and protein synthesis. With red grapes, we also analyze the polyphenic potential in order to help plan the fermentation.
