Exploratory study on the presence of volatile phenols in red wines from Friuli


Study carried out through the monitoring of Friulian red wines aged in wood in order to identify the presence and prevalence of "volatile phenols" and determine any eventual correlation between general analytical data, 4-ethylphenol contamination and sensory analysis.
